Head Baker

About the role

The Head Baker at Silversea Cruises leads all bakery operations aboard the ship, delivering luxury‑level breads, viennoiserie and specialty dietary products. Reporting to the Pastry Chef and Executive Chef, this senior culinary leader ensures consistency, innovation and strict compliance with international standards while enhancing the guest dining experience across premium venues.

Key responsibilities

• Oversee daily production of breads, pastries and bakery items for all onboard venues, including special events.
• Create artisan products such as sourdough, laminated pastries, gluten‑free items and regionally inspired specialties.
• Collaborate with the Executive Chef, Pastry Chef and Fleet Corporate Pastry Chef to develop and adapt bakery offerings.
• Maintain exceptional consistency, presentation and quality assurance for every bakery product.
• Ensure strict adherence to USPH, HACCP, ILO, ISO and maritime safety and hygiene standards.
• Manage inventory, control portions, reduce waste and plan production efficiently.
• Train, supervise and mentor bakery staff, fostering high standards and professional growth.
• Engage with guests during culinary events and demonstrations to enrich their onboard experience.

Required profile

• Valid STCW95 certification.
• Proven experience as Head Baker or Senior Baker in a luxury hotel, Michelin‑starred restaurant or cruise line.
• Advanced knowledge of artisanal bread baking, laminated doughs and modern dietary alternatives.
• Culinary degree or equivalent certification preferred.
• Cruise ship or international hospitality experience is highly advantageous.
• Physically and medically fit with strong moral integrity.

Required skills

• In‑depth understanding of USPH, HACCP, ILO, ISO and maritime safety procedures.
• Good working knowledge of Microsoft applications, Fidelio and MXP systems.
• STCW95 certification and other regulatory certifications as required.
