Rotating Baker – Cruise Ship

About the role

The Rotating Baker works aboard a cruise ship, ensuring the bakery shop runs smoothly each day. Reporting to the Head Baker and Executive Chef, you will produce high‑quality bread and maintain strict hygiene standards in a fast‑paced hospitality environment.

Key responsibilities

• Operate and control the bakery shop and daily production in line with company policies.
• Produce, present and maintain the quality of the bread assortment for daily menus.
• Assist the Head Baker with production forecasts, leftover recording and waste minimisation.
• Set up bread displays across shipboard buffets.
• Apply and monitor United States Public Health (USPH) regulations, preparing for both scheduled and surprise inspections.
• Maintain bakery cleanliness according to the Executive Chef’s schedule and minimise equipment damage.
• Handle requisition and transport of supplies from main stores to the bakery.
• Ensure recipes and yields meet company standards and support daily consumption recap.
• Participate in meetings, training sessions and other work‑related activities as required.

Required profile

• Minimum three years of bakery experience in an upscale hotel, resort, cruise ship or convention banqueting service (shipboard experience preferred).
• High school diploma or equivalent.
• Familiarity with USPH rules and ability to enforce them daily.
• Knowledge of proper cleaning techniques and bakery equipment usage.
