Chef de Partie Baker – Shipboard Bakery

About the role

The Chef de Partie Baker leads the daily bakery operations aboard a cruise ship, ensuring high‑quality bread and pastry production that meets menu requirements and guest expectations. Working closely with the Head Baker, you will manage a multicultural team, maintain food safety standards, and control costs.

Key responsibilities

• Oversee smooth operation of the bakery shop and daily production according to company policies.
• Direct, coach, support, supervise and evaluate bakery staff together with the Head Baker.
• Produce, present and maintain quality of the bread assortment for daily menus.
• Prepare production forecasts, record leftovers and manage inventory to minimise waste and keep food costs within budget.
• Set up bread displays across buffets and ensure compliance with United States Public Health (USPH) regulations.
• Coordinate cleaning schedules, support USPH inspections and maintain equipment.
• Handle requisition and transport of supplies from main stores to the bakery.
• Maintain daily consumption records and ensure staff punctuality, uniform standards and hygiene.
• Attend meetings, training sessions and other work‑related activities as required.

Required profile

• Minimum two years’ experience as a Chef de Partie Baker in an upscale hotel, resort, cruise ship or convention banqueting service.
• Culinary school degree.
• Strong management abilities in a multicultural, dynamic environment.
• Excellent communication, problem‑solving, decision‑making and interpersonal skills.
• Superior customer service, team‑building and conflict‑resolution capabilities.
